The Wait is Over!
We are pleased to announce the release of the new Bin 380!  Crafted in a Rhone-meets-Beaujolais-Nouveau style, "The Bin" -- aside from being wildly popular --- is generally our first release of the year.

Interestingly, the 2018 blend finished at exactly 50% Cinsault and 50% Grenache.  In some ways, these two grapes are natural marriage partners, and the perfect 50/50 blend of this vintage offers us a kind of yin / yang experience.  Especially in a wine of this style. The Cinsault delivers gorgeous wispy aromatics, soft fruit flavors / aromas, fleshy mouthfeel. The Grenache, by contrast, offers up focused red fruit notes, bits of sweet spice, more structure, and firmer tannins.  

Cinsault is dominant on the front end, but the Grenache takes over midpalate --- enrichening and focusing the experience, carrying the wine thru to its impressive finish.

The Cinsault was fermented and aged 100% in stainless - no oak influence in this wine, the fruit itself does all the heavy lifting.  The Grenache, however, was aged 4 months in neutral French oak to take some of the rough edges off the tannins. Finally, at bottling we finished The Bin in a screwcap with a tin liner for maximum freshness.

Enjoy it slightly cool.  Maybe around 55 degrees.  We find it shows much better with a mild chill --- a perfect Spring-Summer sipper.  Cheers!
